So, we had chicken rolls last night for dinner. We haven't had these in a long time, mainly because a couple of years ago I tried to purge a good deal of my recipes that called for cream of anything soup. You know, baby steps to healthy eating and stuff.
Well, the kids loved them, and so I think that I will be making them more often. Because I am all about serving food that the kids will eat so fast there is no time for me to put my fork down and threaten judgement day if they don't sit down and eat already.
Chicken Rolls
1 can cream of chicken soup
1/4 cup milk
1 can crescent rolls (8)
2 shredded chicken breasts
4 oz. Velveeta cheese
Stir together soup and milk in a greased baking dish. Cut cheese into 8 equal parts. Place one slice of cheese and a spoon full of chicken on the wide end of the triangle of the crescent roll. Roll dough and crease edges to contain the cheese and chicken. Place the rolls in the soup mixture. (The sauce should be 3/4 covering the rolls.) Bake at 375 degrees for 25 mins. Great served with your favorite vegetable and a salad.
I do try to buy the non-fat, low-fat, 98% fat free versions of all the ingredients above. Every little bit helps!
I originally got this recipe from my friend Amy over at Mia's Story. It was back when we were all newly married and we were so proud of ourselves for serving anything that actually had to go in the oven and bake for a while. Oh, how impressed our young husbands had been with our exquisite cooking talents. Little did we know that some years later we would be gauging our cooking success by how impressed our children were with the dish. Well, this dish seems to be timeless since it pleases the young husbands and the children. Did I just compare our young husbands to children? No, I would never do such a thing.

Haahaha that's so funny because before I read that second part, I was just thinking how similar my life is with yours. Haha. AND I don't have three kids. Eric adores cheese and hates veges, and pretty much anything green, and he would love these chicken rolls! haha thanks for sharing!

yes, our family is ok. we are all tired of rain in this area. in april, our lake was -12 ft. it is up 22ft. we have not had as much housing floods, but we do not have houses directly on the lake either. all our parks are under water. they are on lbj and it is regulated, due to the name. they are fine. thanks for asking about them. so much for living in a town with a lake. they are closed until aug. that is, if it quites raining!
