I've decided that I'm terrible at NaBloPoMo. I've lost track of how many days I've missed. I should probably take the button off my sidebar. I'll try to get around to that.

Yesterday I made our list of meal options for the next couple of weeks...or until the food runs out. Then I made a grocery list, and the girls and I hit the grocery store this morning after dropping Bubba off at youth group.

Several of the dinner options are new-to-me recipes, so I'll let you know how they turn out. I spent some time searching the internets for some healthy, crock pot recipes. Because it's summer and it's HOT and I'm trying to keep the house cool by avoiding the oven.

I found several yummy looking recipes from Gina's Skinny Recipes. Since I am of the Weight Watchers persuasion and counting carbs for Brooke, I love that the WW Points and nutritional information are posted for every recipe.

After looking over the list, I feel the need to post a disclaimer...the lunch options are for the kids. I usually eat leftovers, some sort of wrap, or occasionally a frozen dinner.

Kalua Pork Wraps ~ lettuce, brown pineapple fried rice
Baked Potatoes ~ leftover brisket and all the fixin's
Santa Fe Chicken ~ lettuce, chips
Shrimp Fajitas ~ chips, salsa, guac, cheese, peppers, beans

I made chicken soft tacos this week using a rotisserie chicken from WM. Just shredded it and added a little chili powder and cumin. They were DE.LI.CIOUS!
